Big Ideas from Week 3

Big Idea #1: The Messages We've Received

What messages do we receive from our parents and from society about food?
These ideas often become internalized and continue to broadcast their truth or untruth to us.
What did John learn in the "31 Flavors" family?
  • The more ice cream, the better! (seriously.)
  • There is no relationship between diet and health.
  • Eat what you’re told.
  • Mom knows best, and she is right.
  • The kid's job is to obey and not to question what he is served.

What did Ocean learn from his parents (including John!):
  • Gratitude! They grew most of the food they ate, so food was a product of labor. There was a tremendous amount of gratitude for the rain, the sun, soil, and for each new harvest.
  • They ate simply, but richly, because all the food was something to savor.
  • They took time with their meals, and so there was a respect for food as precious and beautiful.
  • What we eat has a tremendous impact on our long-term health and how much energy we have day-to-day.
  • He learned to listen to and trust himself, when it came to certain foods that would be good for him.
  • Meals were the primary space where people would come together and share time together; it's a sacred act to share food.
What messages have you received? Do you relate more with John's experience or Ocean's?
Are you still carrying any messages that are no longer serving you?

Big Idea #2: Raising Kids in a Toxic Food Culture

All of us are so bombarded by advertisements for unhealthy products that are full of chemicals, trans fats, sugars, and sodium.
We also know that many commercial interests specifically target children!
Add into that birthday parties, lunches at school, and play dates—how do you raise a child to think about food in a healthy way?
What was it like for John to raise Ocean in a toxic food culture?
He wanted to raise Ocean to appreciate the relationship of the earth and food in a much more respectful way than our culture does, which often views food as an entertainment, a distraction, a stimulation and an avoidance of our feelings.
For John, it was far more important for Ocean to be able to talk about his choices and what happens in his life, rather than a child just following his parents' rules.
John's job: to help Ocean develop a healthy relationship to the assumptions and craziness of the culture, so that Ocean wouldn't be "forbidden" from eating certain foods. Instead, John and his wife would explain to him why they ate what they did, and why they didn’t eat other foods, knowing in time that Ocean would be able to make up his own mind. They were there to support and nurture him, giving him a strong foundation so that he could make his own choices.

Big Idea #3: Finding Food Freedom

How can we become more free with our food choices and with our relationship with food?
We want to be free to bring our food choices into congruence with our values and with our sense of purpose—when there is that sense of integrity, that's when you can feel most free, liberated, and powerful!
We want our food to bring us health, vitality, and fulfillment; to be a contribution to the world around us—to eat simply so that others may simply eat; for our food choices to be resonant with the world we want for animals; and for our participation with food to be a source of joy!
What do you struggle with, and what are you working toward in your life, as your contribution and legacy?
Where to begin? Bring joy and gratitude to your relationship with food, and by sharing good food with other people.
A couple questions to consider:
  • Do you feel fulfilled and joyous with food?
  • Do you have people in your life that are close to you and support your ideal way of eating?
If you don't know other people that eat in ways you want to aspire toward, find potlucks and gatherings of others who are interested in this; create a support mechanism for yourself!

Other Important Stuff:

John Robbins, has released a provocative and short new video with the title: “Should Junk Food Marketing to Kids be Banned?”

If you want to get involved, Campaign for a Commercial-Free Childhood and Food Revolution Summit speaker Michele Simon’s Appetite for Profit are excellent resources.

Living the Food Revolution with John and Ocean Robbins: Week 2 - Our Food, Our World

                                                    Wednesday June 13, 2012
  • COWS, what really happens,
  • GMOS, what we do not know and should know,
  • ORGANIC, what it means, the value of organic and where to find them, also ideas how to grow them
The treatment of cows before the product comes to the store shelves and to your table. Many do not have any idea what GMOs are, the true meaning of organic should be clarified.

Nutrition, Health & Well-being

The Context

Find out the truth about genetically modified foods, and the real effect of the food you eat on your health and on our world. Then learn how to put that knowledge into actionable and delicious practice in your life.

Big Idea #1: Our Animal Family

Think about the first animal you loved: did it have a name? how did it leave your life? How was that for you? How does that memory live in you now?
We call some animals pets and value them so highly—we pay their vet bills and we let them sleep in the same beds we do; other animals, we call livestock, and because of that semantic difference, we allow ourselves to end their life for consumption.
Animals draw breath from the same source as we do. They are our brothers and sisters.
Why does this difference exist? Does it align with your beliefs?
As Martin Luther King, Jr. said, “Never, never be afraid to do what's right, especially if the well-being of a person or animal is at stake. Society's punishments are small compared to the wounds we inflict on our soul when we look the other way.”
Do you need to take a stand for your own integrity and conscience?

Big Idea #2: Save the Animals, Save the Planet

The science is there: global warming exists. Our actions are causing changes to this planet and they are happening now!
Every single glacier on this planet is shrinking; all the glaciers in Glacier National Park in Montana will be gone in 20 years. The Earth will be the hottest it has been in 2 million years at the end of this century.
The most significant way to change this: eat less or no meat, especially factory-farmed. This is the strongest reason to eat a more plant-strong diet. We can begin to slow this change down!
What about Grass Fed vs. Regular Beef?
It’s like trading in your car and getting a Prius. It helps, but there is more to be done. We need to eat much less of all forms of beef. We really need to take global warming far more seriously than we have.
The biggest thing we can do to cut down on greenhouse gas emissions: eating more vegetables!

Big Idea #3: Feeding the World: GMOs vs. Organic Food

What are GMO’s?
Genetically modified organisms. Sounds tasty, right? :)
Some of the hoopla surrounding GMOs happened when Time magazine ran an article stating that GMO’s could solve world hunger. Well, none of the biotech companies are doing anything about this. None of the genetically modified crops have any desirable characteristics. Most of the GMO crops are created to feed animals.
Currently, GMO's have nothing to do with solving world hunger, and everything to do with making more profit and controlling the world’s food supply.
If we were to shift to more organic, low-input, sustainable forms of agriculture, and were able to drastically reduce our meat (specifically beef) consumption, we could feed the world organically, because we wouldn’t need to produce as much.
We need to produce the amounts of grain that we do because we're feeding almost all of it to the animals we confine in farms!
Get this: It takes 16 pounds of grains to produce the average pound of beef; it only takes only one pound of grain to make a pound of whole wheat bread, brown rice or quinoa.
This is a terribly inefficient way to feed ourselves. We’re cycling the grain through our animals, and essentially wasting most of it. It’s a protein factory in reverse. This is insane.

If we were to adopt a more plant-based and humane diet, and didn't need to produce so much grain to feed our livestock in factory farms, we could all eat organically and do quite well!

Living the Food Revolution with John and Ocean Robbins: Week 1 - Food and Healing

                                                      Wednesday June 6, 2012
                                                Nutrition, Health & Well-Being

The Context

Find out the truth about genetically modified foods, and the real effect of the food you eat on your health and on our world. Then learn how to put that knowledge into actionable and delicious practice in your life.
Best selling author, John Robbins, joins forces with his son, Ocean Robbins, to give you practical, step-by-step support to bring your food choices into alignment with what you truly value.
Living the Food Revolution will extend your life, increase your vitality, and help you take a stand for a more compassionate and sustainable world.

Big Idea #1: Using Food as a Mirror!

If you look at your food as a mirror, what do you see?
How do you eat? Where do you eat it? What is emotional atmosphere of your table? What is the quality of your food and the way it’s been produced?
Does the whole energy field reflect back to you a life consistent with the values you hold... or is it disconnected?
Many people use food as entertainment and a distraction. If that’s what you "see," often you’ll also see obesity issues. The norm is becoming to be overweight and to be sick.
We spend less per capita on our food that any country in the world; we spend more per capita on health care than any nation in the history of the world! John and Ocean believe that's more than just a coincidence.
Cheap food = high medical costs.
Get clear on what's important to you food-wise, and then create that in your mirror! :)

Big Idea #2: The Biggest Health MYTH!

So what's the BIGGEST HEALTH MYTH out there?
That we need dairy products to get enough calcium!
This is not true, and there is no data to support it. The dairy industry has done a tremendous job of promoting this – that calcium is best absorbed through dairy.
Check out these stats:
  • Brussel Sprouts: 54% of the calcium gets absorbed
  • Mustard Green: 58%
  • Kale: 51%
How about Cow’s Milk... 32%
Yup, Milk/Cheese/Yogurt are all at the bottom of the list. These companies want us to believe that without their products, calcium nutrition is difficult to achieve. It’s misleading and it’s wrong.
Here's another statistic: the countries in the world with the highest consumption of dairy and the highest occurrence of osteoporosis: Finland, Sweden, the United States, and England.
Again, these are more than just coincidences!

Big Idea #3: 7 Top Cost-Saving Tips!

  • Buy large quantities of long-lasting products, such as GRAINS & BEANS

  • Buy unprocessed foods
  • Cook and prepare food at home with simple ingredients; most people spend half their budget eating out at restaurants – what you eat at home will be much healthier!

  • Make food in quantity and freeze the extra!

  • Buy fresh fruits and vegetables as local as possible – from farmer’s markets and from people actually growing the food.
  • Plant a garden – this is such a great thing to do with kids; you might also be able to find a community garden.
  • Make a good shopping list and stick to it – focus on what you know you need!

APPETITE FOR PROFIT:How the Food Industry Undermines our Health and How to Fight Back

Appetite for Profit: How the food industry undermines our health and how to fight back

Some of the central quotations from this book:

Exposing Government Complicity
"Americans have become accustomed to eating highly processed food that come in a package-the antithesis of whole-foods that come from nature. The very definition of food has been transformed by industry, yet the dietary guidelines don't reflect that. If they did, it would be a major threat to a $500 billion- a-year processed foods industry, whose voice is heard loud and clear in Washington, especially when it comes to what is said in the dietary guidelines. Something else the federal government isn't telling us is how to avoid harmful trans fats. Dr. Carlos Camargo of the Harvard Medical School and a member of the dietary guidelines committe said he was "disappointed" that the experts' unanimous recommendation to limit trans fats to 1 percent of calories was completely omitted from the final document. Instead, we are told to simple 'limit the intake' of trans fat."
"Why the change? Food Politics author Marison Nestle explains: 'Trans fat was left vague because otherwise they would have to say where trans fats are--in processed foods.' In wording that Nestle calls 'incomprehensible,' the consumer-friendly guidelines brochure recommends that you "look for foods low in satureated fats and trans-fats" -- the two most common artery-clogging fats in the supermarket. Why would the government tell you to "look for" foods that you really should avoid altogether? Because it cannot say: don't eat too many of the major sources of saturated fats: meat, cheese, milk, and eggs. Nor could Uncle Sam tell us to avoid the main sources of trans fats: fried and baked goods such as chips, cakes, and cookies. That would ruffle too many industry feathers." (pg. 145)

**My comments:
1) "limit" means different things to different people
2)  Uncle Sam CANNOT tell us because it would represent less consumption from the public; therefore,  hurting the big profitable interests of the main food corporations and the lobbyists such as the Dairy Industry, the Cattle industry, The Poultry and Fish industry and many more. The explanation and understanding of this dynamics are simple: Cause and Effect and Profitable interests.

MICHELLE SIMON is a public health attorney specializing in nutrition policy and food industry tactics. She lectures extensively and teaches health policy at the University of California, Hastings College of the Law, where she also received her law degree. Her master's degree in public health is from Yale University.

Valuable quotations:

"Apettite for Profit is nothing less than a "how-to" manual for anyone who wants to stop food companies form marketing junk food, especially to childrern. Michelle Simon brilliantly exposes what corporations really mean when they say they market responsibly, and how they use trade, professional, and, sometimes government groups to protect sales and attack critics. I am requiring my nutrition students to read this book."

- Marion Nestle , author of Food Politics and What to Eat.

" America is currently embroided in a national debate over who is to blame for the growing public health crisis of obesity and diet-related illness, especially among children. The major food companies, including Kraft, Coca-Cola, and McDonald's, are responding to criticism with a masive public relations campaign, pretending to be "part of the solution." Meanwhile, these same corporations obstruct commonsense nutrition policies.
Appetite for Profit exposes this hypocrisy. It describes food industry lobbying, front groups, and other tactics that threaten our health. Learn how to spot the PR and organize to improve food in schools and elsewhere.
'Michelle Simon lays bare the disaster of industrial food, exposing the corporate greed and propaganda controlling our media and politics on critical issues of health and sustainability. Read this very important book.'

- John Stauber, author of Mad Cow USA, Toxic Sludge is Good for You, and Trust Us, We're Experts.
"Clear amd convincing! Simon rips the mask of the food industry, exposing a dangerous hypocrisy that's turned into our biggest health threat."
-Frances Moore Lappé, author of Diet for a Small Planet.

One interesting review:

"Reading No Happy Cows has made it easy for me to make a few simple, yet powerful changes in my diet that have already resulted in my losing four pounds in just one week while also feeling stronger and more alive. I'm not a big reader, so the best thing about the book is that it's short, concise, engaging, AND entertaining. Each chapter which takes just 10-20 minutes to read, takes a subject like grass-fed beef and then leads you on a short but very thorough and memorable journey that has resulted in my making more informed and healthy choices at the grocery store the very next day. Here's a book on food choices that's not only good for you but also easy to digest and it's delivered in bite sized pieces!" -Tom Callanan

ALZHEIMER'S DISEASE:What if There Was a Cure?

Alzheimer's Disease: What If There Was a Cure?

I read this book and Dr. Newport gives very compelling testimony of her husband/s Alzheimer's condition. However, and this is only my personal position about this, I do not believe the "scientific information" provided to support the claims are sufficient serious and solid. This is a very interesting possible discovery, but -in my opinion- it needs more scientific research.
I am posting this in my blog because it is part of my research work and because I find it important to be out here for people to acquire knowledge, do their own research and find out for themselves, with this base as a point of departure.

So, welcome to the following book reviews by some readers:

"Consider another point of view based on the following points:"

"1. While coconut oil may increase ketones and help brain function, it may be damaging veins, arteries and capillaries at the same time.

2. The United States Food and Drug Administration, World Health Organization, International College of Nutrition, the United States Department of Health and Human Services, American Dietetic Association, American Heart Association, British National Health Service, and Dietitians of Canada recommend against the consumption of significant amounts of coconut oil due to its high levels of saturated fats.

3. Although coconut oil can increase HDL, it is also *hardens arteries*. "The Golden hamster has been used in many studies to observe the development of atherosclerosis and study the effects of various types of fats. In a recent study by Mangiapane et al at the University of Nottingham, Loughborough, UK, hamsters were fed a diet high in cholesterol and either coconut oil or olive oil. The hamsters in the olive oil group had less atherosclerosis. In a second study the researchers stopped the high cholesterol diet but continued either coconut or olive oil. Atherosclerosis lesions in the large arteries actually continued to increase in size in the coconut oil group."

4. When scientists want to study artery hardening in animals, do you know what they feed them to induce atherosclerosis? *Coconut oil*.

5. Although coconut oil may help with one problem, you are going to be destroying your veins in the process, eventually leading to heart attack or stroke.

6. I just don't want people to trade one problem for another, maybe more serious one. Also, for some who have diabetes leading to memory problems, we shouldn't assume that lifelong chronic bad health choices (e.g., overeating, lack of exercise, high carb and fatty diet, obesity) will be fixed by some "miracle cure" latest natural dietary saturated fat. The solution to the problem (for many) is self control, limiting portion sizes, reducing fat and carbohydrates, and exercise.

7. Medical decisions need to be taken from peer-reviewed scientific articles. You can find these at places such as PubMed or Google Scholar."

"I work as a researcher and found this book one day while in search of another one. My sister is in the middle stages of the disease and I am hungry for any
thing that will help her in her struggle. We are blessed in that she still can drive, cook and still knows us all, but she is gradually declining. I am
thankful for the information in the book and am praying for a cure! God bless the author of Alzheimer's Disease: What If There Was a Cure? for sharing her
experience and the information she has obtaining with all of us."

Prevent and Reverse Heart Disease: The Revolutionary, Scientifically Proven, Nutrition-Based Cure

No more Heart Attacks --- Ever!!

This book is a LIFE SAVER TOOL in paper and in words and a blessing in anyone's hands!

Compelling science and serious work that enlightens everyone who starts opening the first page of this book and learns so much. Prevent and Reverse Heart conditions? -What a new concept and a discovery!!
This is one of my favorite quotes:
"Twenty years ago, when I started my research, our major focus was on reducing total blood cholesterol levels to below 150 mg/dL. and cutting LDL levels to 80 mg/dL or less. But today, it is clear to me that in achieving those goals throught plant-based nurition, we also achieved a corollary result: we restored the body's own proerful capacity to resist and reverse vascular disease." (page 41)

Some important book reviews:

A Life Saver book!,

"This book literally saved my life. I have been following Dr. Esselstyn's advice since the last week of March, 2009. When I went in for my annual cardiologist visit in july, I has lost 62 lbs. My colestrol was 124, down from 260 the year before. In July of 2008 I was pre-diabetic, weighed 325 lbs, and my entire blood panel was a disaster. The doctor was so concerned, she ordered an angiogram. This year, everything was perfect, or low after four months on the program.

Better yet, I have more energy, I sleep better, and I'm not as angry. My wife says, "I'm a different person." No calorie counting, no portion measuring, no exercise regimine, and you can drink in moderation."

Richard G. Berry
(Humble, Texas)

The Best Heart book ever written,

"This is the best heart book ever written period. I have about 50 health books. Ornish's book made me think about it, Esselstyn's book made me do it. All other health and heart books are just noise, they will just confuse you. This one is the best in many ways. In many ways the study is more powerful, and the book is more powerful than the Ornish books by far, though I think Ornish is admirable. This book really should be read along with The China Study, as the two authors refer to one another and their work in the two books. The China Study goes more in depth about the science and rational behind what Esselstyn is suggesting. The China Study is also an outstanding book. Congradulations to Mr Esselstyn, he is by far the best thing going at the Cleveland Clinc, this from one of its angioplasty patients. The only addition I would make to his analysis, is once you are able to, you need to add reasonable exercise, it is essential. But I understand his reasons for sort of omitting it. I suggest Mr Esselstyn write a Reversing Heart Disease Part 2, or "Advanced" there I am sure he would suggest strongly about exercise, as seen with himself and his own family. And I am sure he also has a lot to update us on. Great book, a must for anyone with heart disease."

Steven J. Greenwald

Lycky to find Dr. Esselstyn,

"I was lucky enough to find Dr. Esselstyn almost 3 years ago after a stress test showed an insufficient blood flow during exercise. Rather than undergoing a quadruple by-pass operation (standard procedure), I adopted his healthy life style and my last two annual stress tests showed no blood flow deficiency. Each day I eat healthily I feel in control of my life. My stamina has returned, my indigestion has gone and my optimism is back. Don't feel deprived. Feel empowered!"
