Big Idea #1: The Messages We've Received

What messages do we receive from our parents and from society about food?
These ideas often become internalized and continue to broadcast their truth or untruth to us.
What did John learn in the "31 Flavors" family?
  • The more ice cream, the better! (seriously.)
  • There is no relationship between diet and health.
  • Eat what you’re told.
  • Mom knows best, and she is right.
  • The kid's job is to obey and not to question what he is served.



What did Ocean learn from his parents (including John!):
  • Gratitude! They grew most of the food they ate, so food was a product of labor. There was a tremendous amount of gratitude for the rain, the sun, soil, and for each new harvest.
  • They ate simply, but richly, because all the food was something to savor.
  • They took time with their meals, and so there was a respect for food as precious and beautiful.
  • What we eat has a tremendous impact on our long-term health and how much energy we have day-to-day.
  • He learned to listen to and trust himself, when it came to certain foods that would be good for him.
  • Meals were the primary space where people would come together and share time together; it's a sacred act to share food.

Big Idea #2: Raising Kids in a Toxic Food Culture

All of us are so bombarded by advertisements for unhealthy products that are full of chemicals, trans fats, sugars, and sodium.
We also know that many commercial interests specifically target children!
Add into that birthday parties, lunches at school, and play dates—how do you raise a child to think about food in a healthy way?
What was it like for John to raise Ocean in a toxic food culture?
He wanted to raise Ocean to appreciate the relationship of the earth and food in a much more respectful way than our culture does, which often views food as an entertainment, a distraction, a stimulation and an avoidance of our feelings.
For John, it was far more important for Ocean to be able to talk about his choices and what happens in his life, rather than a child just following his parents' rules.
John's job: to help Ocean develop a healthy relationship to the assumptions and craziness of the culture, so that Ocean wouldn't be "forbidden" from eating certain foods. Instead, John and his wife would explain to him why they ate what they did, and why they didn’t eat other foods, knowing in time that Ocean would be able to make up his own mind. They were there to support and nurture him, giving him a strong foundation so that he could make his own choices.

Big Idea #3: Finding Food Freedom

How can we become more free with our food choices and with our relationship with food?
We want to be free to bring our food choices into congruence with our values and with our sense of purpose—when there is that sense of integrity, that's when you can feel most free, liberated, and powerful!
We want our food to bring us health, vitality, and fulfillment; to be a contribution to the world around us—to eat simply so that others may simply eat; for our food choices to be resonant with the world we want for animals; and for our participation with food to be a source of joy!
What do you struggle with, and what are you working toward in your life, as your contribution and legacy?
Where to begin? Bring joy and gratitude to your relationship with food, and by sharing good food with other people.
A couple questions to consider:
  • Do you feel fulfilled and joyous with food?
  • Do you have people in your life that are close to you and support your ideal way of eating?
If you don't know other people that eat in ways you want to aspire toward, find potlucks and gatherings of others who are interested in this; create a support mechanism for yourself!

Big Idea #1: Our Animal Family

Think about the first animal you loved: did it have a name? how did it leave your life? How was that for you? How does that memory live in you now?
We call some animals pets and value them so highly—we pay their vet bills and we let them sleep in the same beds we do; other animals, we call livestock, and because of that semantic difference, we allow ourselves to end their life for consumption.
Animals draw breath from the same source as we do. They are our brothers and sisters.
Why does this difference exist? Does it align with your beliefs?
As Martin Luther King, Jr. said, “Never, never be afraid to do what's right, especially if the well-being of a person or animal is at stake. Society's punishments are small compared to the wounds we inflict on our soul when we look the other way.”
Do you need to take a stand for your own integrity and conscience?

Big Idea #2: Save the Animals, Save the Planet

The science is there: global warming exists. Our actions are causing changes to this planet and they are happening now!
Every single glacier on this planet is shrinking; all the glaciers in Glacier National Park in Montana will be gone in 20 years. The Earth will be the hottest it has been in 2 million years at the end of this century.
The most significant way to change this: eat less or no meat, especially factory-farmed. This is the strongest reason to eat a more plant-strong diet. We can begin to slow this change down!
What about Grass Fed vs. Regular Beef?
It’s like trading in your car and getting a Prius. It helps, but there is more to be done. We need to eat much less of all forms of beef. We really need to take global warming far more seriously than we have.
The biggest thing we can do to cut down on greenhouse gas emissions: eating more vegetables!

Big Idea #3: Feeding the World: GMOs vs. Organic Food

What are GMO’s?
Genetically modified organisms. Sounds tasty, right? :)
Some of the hoopla surrounding GMOs happened when Time magazine ran an article stating that GMO’s could solve world hunger. Well, none of the biotech companies are doing anything about this. None of the genetically modified crops have any desirable characteristics. Most of the GMO crops are created to feed animals.
Currently, GMO's have nothing to do with solving world hunger, and everything to do with making more profit and controlling the world’s food supply.
If we were to shift to more organic, low-input, sustainable forms of agriculture, and were able to drastically reduce our meat (specifically beef) consumption, we could feed the world organically, because we wouldn’t need to produce as much.
We need to produce the amounts of grain that we do because we're feeding almost all of it to the animals we confine in farms!
Get this: It takes 16 pounds of grains to produce the average pound of beef; it only takes only one pound of grain to make a pound of whole wheat bread, brown rice or quinoa.
This is a terribly inefficient way to feed ourselves. We’re cycling the grain through our animals, and essentially wasting most of it. It’s a protein factory in reverse. This is insane.

                                                 
If we were to adopt a more plant-based and humane diet, and didn't need to produce so much grain to feed our livestock in factory farms, we could all eat organically and do quite well!

Here's another statistic: the countries in the world with the highest consumption of dairy and the highest occurrence of osteoporosis: Finland, Sweden, the United States, and England.
Again, these are more than just coincidences!

  • Buy large quantities of long-lasting products, such as GRAINS & BEANS


  • Buy unprocessed foods
  • Cook and prepare food at home with simple ingredients; most people spend half their budget eating out at restaurants – what you eat at home will be much healthier!

**My comments:
1) "limit" means different things to different people
2)  Uncle Sam CANNOT tell us because it would represent less consumption from the public; therefore,  hurting the big profitable interests of the main food corporations and the lobbyists such as the Dairy Industry, the Cattle industry, The Poultry and Fish industry and many more. The explanation and understanding of this dynamics are simple: Cause and Effect and Profitable interests.

Alzheimer's Disease: What If There Was a Cure?

I read this book and Dr. Newport gives very compelling testimony of her husband/s Alzheimer's condition. However, and this is only my personal position about this, I do not believe the "scientific information" provided to support the claims are sufficient serious and solid. This is a very interesting possible discovery, but -in my opinion- it needs more scientific research.
I am posting this in my blog because it is part of my research work and because I find it important to be out here for people to acquire knowledge, do their own research and find out for themselves, with this base as a point of departure.

"1. While coconut oil may increase ketones and help brain function, it may be damaging veins, arteries and capillaries at the same time.

2. The United States Food and Drug Administration, World Health Organization, International College of Nutrition, the United States Department of Health and Human Services, American Dietetic Association, American Heart Association, British National Health Service, and Dietitians of Canada recommend against the consumption of significant amounts of coconut oil due to its high levels of saturated fats.

3. Although coconut oil can increase HDL, it is also *hardens arteries*. "The Golden hamster has been used in many studies to observe the development of atherosclerosis and study the effects of various types of fats. In a recent study by Mangiapane et al at the University of Nottingham, Loughborough, UK, hamsters were fed a diet high in cholesterol and either coconut oil or olive oil. The hamsters in the olive oil group had less atherosclerosis. In a second study the researchers stopped the high cholesterol diet but continued either coconut or olive oil. Atherosclerosis lesions in the large arteries actually continued to increase in size in the coconut oil group."

4. When scientists want to study artery hardening in animals, do you know what they feed them to induce atherosclerosis? *Coconut oil*.

5. Although coconut oil may help with one problem, you are going to be destroying your veins in the process, eventually leading to heart attack or stroke.

6. I just don't want people to trade one problem for another, maybe more serious one. Also, for some who have diabetes leading to memory problems, we shouldn't assume that lifelong chronic bad health choices (e.g., overeating, lack of exercise, high carb and fatty diet, obesity) will be fixed by some "miracle cure" latest natural dietary saturated fat. The solution to the problem (for many) is self control, limiting portion sizes, reducing fat and carbohydrates, and exercise.

7. Medical decisions need to be taken from peer-reviewed scientific articles. You can find these at places such as PubMed or Google Scholar."

The Best Heart book ever written,

"This is the best heart book ever written period. I have about 50 health books. Ornish's book made me think about it, Esselstyn's book made me do it. All other health and heart books are just noise, they will just confuse you. This one is the best in many ways. In many ways the study is more powerful, and the book is more powerful than the Ornish books by far, though I think Ornish is admirable. This book really should be read along with The China Study, as the two authors refer to one another and their work in the two books. The China Study goes more in depth about the science and rational behind what Esselstyn is suggesting. The China Study is also an outstanding book. Congradulations to Mr Esselstyn, he is by far the best thing going at the Cleveland Clinc, this from one of its angioplasty patients. The only addition I would make to his analysis, is once you are able to, you need to add reasonable exercise, it is essential. But I understand his reasons for sort of omitting it. I suggest Mr Esselstyn write a Reversing Heart Disease Part 2, or "Advanced" there I am sure he would suggest strongly about exercise, as seen with himself and his own family. And I am sure he also has a lot to update us on. Great book, a must for anyone with heart disease."
